Chocolate tempering mistakes and how to fix them

Five common failures, what each one is telling you, and which of them are materials problems rather than technique problems.

If you read nothing else

Streaky, soft and won't-release are all the same fault presenting differently — the wrong crystal form. Grainy and seized are different problems entirely.

Streaky or marbled once set

Unstable crystal forms present alongside the stable one, usually because the chocolate was not cooled far enough or the seed was insufficient. It cannot be corrected in place: remelt fully to 45–50°C, destroying all crystal structure, and start again. Streaking is the most common failure and the most straightforward to diagnose.

Sets soft and marks with fingerprints

Either the temper failed, or the chocolate is not couverture and simply has too little cocoa butter. Check whether the seed was genuinely in temper — use a bar that snaps rather than bends — and whether the working temperature was reached. If both were right, the material is the problem.

Will not release from the mould

Correctly tempered chocolate contracts as it sets and releases essentially by itself. A piece that has to be forced out was not in temper. A cold mould causes the same result by shocking the chocolate into the wrong form — moulds should be clean, dry and at room temperature.

Thick and unworkable in the bowl

Either the chocolate has cooled too far and over-crystallised, in which case warming it a degree or two while stirring will loosen it, or it is an eating bar rather than couverture and is simply too viscous. Over-crystallised chocolate that has gone past recovery needs remelting.

Grainy or seized — a different problem

This is not a tempering failure. Grainy with a burnt smell means scorching. A sudden thick paste means water got in. Neither is recoverable as tempering chocolate, and confusing them with temper failures leads people to remelt repeatedly in the hope of fixing something remelting cannot touch.
