Dipping in chocolate
Coating a centre by hand with a fork. The simplest enrobing there is, and everything depends on the centre being dry and at room temperature.
Dipping lowers a prepared centre into tempered chocolate, lifts it out on a fork, taps off the excess and sets it on paper. It is the domestic equivalent of an industrial enrobing line.
Two constraints govern it. The centre must be dry — any surface moisture will seize the chocolate at the point of contact and cause the coating to slip. And it must be at room temperature: a chilled centre sets the coating too fast, which cracks it and can cause bloom within hours.

- 29–32°C — Working temperature by type: 31–32°C dark, 30–31°C milk, 29–30°C white. Chocolate below range thickens and coats heavily.

Method
1. Bring the centres to room temperature and dry any surface moisture thoroughly.
Where people go wrong: Dipping straight from the fridge. The coating sets too fast, cracks, and often blooms within a day.
2. Temper the chocolate and keep it at working temperature in a deep, narrow bowl.
Where people go wrong: A wide shallow bowl, which cools too quickly and takes the chocolate out of temper mid-batch.
3. Drop the centre in, lift it out on a dipping fork, and tap the fork on the bowl edge to shed excess before setting it down.
Where people go wrong: Not tapping, which leaves a thick coating and a large foot.
When it goes wrong
