Chocolate projects with children

Skip tempering. Compound coating and a handful of forgiving techniques give good results without the one step that reliably ruins the afternoon.

Compound coating removes the tempering problem entirely. Bark, dipped fruit and silicone moulds are the four projects that reliably work.

Use compound coating and do not apologise

Tempering requires precision, patience and a cool room, and failing at it is the fastest way to end a project in tears. Compound coating sets hard and glossy without tempering because its fat is not cocoa butter.

It is not chocolate and it does not taste as good. For an activity where the point is the making rather than the eating, that is an entirely reasonable trade.

What works

Bark — melted coating poured onto a lined tray and scattered with whatever is to hand, broken up when set. Dipped fruit and pretzels. Filled moulds using silicone ice-cube trays, which release far more easily than polycarbonate. Chocolate-dipped spoons for hot chocolate.

All four are forgiving of imprecision and all four produce something recognisably successful.

What does not

Anything requiring temper: moulded bonbons, shells, decorations meant to snap. Anything needing sustained heat control. Anything where the setting has to happen in under twenty minutes, because it will not.

And tempering itself as the activity. It is genuinely interesting to watch and genuinely unrewarding to do at eight years old.

Practical safety notes

Melted chocolate at 45°C is hot enough to burn. Microwave melting in short bursts with an adult handling the bowl is safer than a bain-marie with a pan of simmering water at child height.

And a note that matters more than it sounds: chocolate is toxic to dogs, because they metabolise theobromine very slowly. A chocolate project with children and a dog in the house needs a plan for where the offcuts go.
