Whipped ganache
A soft ganache cooled and then whipped to hold air. Lighter than ganache, more stable than mousse, and the ratio is the whole trick.
Whipping a ganache turns a dense emulsion into an aerated filling that pipes and holds its shape. It sits between ganache and mousse: lighter than the first, far more stable than the second.
The ratio has to be softer than a truffle ganache — around 1:1 for dark by weight — because a firm ganache will not whip, it will simply break. And it must be fully cold before whipping. Whipping a warm ganache produces a greasy split that no amount of further beating recovers.

Method
1. Make a soft ganache at around 1:1 for dark, 2:1 for milk, 3:1 for white.
2. Cool to room temperature, then refrigerate until thoroughly cold.
Where people go wrong: Whipping while still warm, which splits the emulsion rather than aerating it.
3. Whip on medium speed only until it lightens and holds a soft peak.
Where people go wrong: Whipping to stiff peaks. Ganache goes from aerated to grainy in a few seconds and cannot be brought back.
When it goes wrong
