Cleaning chocolate equipment
Polycarbonate moulds are never washed with detergent. One dishwasher cycle destroys the finish permanently.
Chocolate equipment is cleaned dry wherever possible, because water is the material's principal enemy and because detergent damages the surfaces that produce gloss.
Polycarbonate moulds are wiped with cotton wool, and nothing else. Detergent leaves a film that dulls the finish; a dishwasher micro-scratches the surface and the mould never gives a mirror finish again. This is the single most expensive mistake available in a chocolate kitchen and it is entirely irreversible.
Bowls and tools are washed conventionally and then dried completely — a bowl that feels dry can hold enough residual moisture to seize the next batch.

Method
1. Wipe polycarbonate moulds with dry cotton wool. Never use detergent, abrasives or a dishwasher.
Where people go wrong: Putting moulds in a dishwasher. The finish is destroyed permanently in one cycle.
2. Scrape residual chocolate from bowls and tools before washing, and save it — it re-melts perfectly.
3. Dry everything completely before the next batch.
Where people go wrong: Using a bowl that feels dry. Residual moisture is the commonest cause of seizing.
