Nama chocolate is a ganache poured into a lined tray, set in a refrigerator until firm, cut into cubes and dusted with cocoa powder. There is no shell, no tempering and no moulding, which makes it the most achievable filled-chocolate-adjacent project a home kitchen can attempt.

What it demands instead is temperature discipline. The ganache must be firm enough to cut cleanly and soft enough to melt on contact, which is a narrow window, and every failure in the process is a temperature failure rather than a technique one.

It is a fresh dairy product with a shelf life measured in days, kept refrigerated. Japan's labelling code sets minimum chocolate and cream proportions for anything sold under the name; a home version is not bound by that and the proportions are what make it behave correctly anyway.

Method

  1. 1. Line a shallow tray with baking parchment, leaving an overhang on two sides to lift the slab out later.

    Where people go wrong: Using a deep tin. The slab should be roughly a centimetre and a half thick; deeper makes it unpleasant to eat and harder to cut.

  2. 2. Heat the cream to just below a simmer and pour it over finely chopped chocolate. Leave it a minute without stirring.

    Where people go wrong: Boiling the cream. It reduces, which changes the ratio you carefully measured.

  3. 3. Stir from the centre outwards in small circles until the emulsion comes together and turns glossy.

    Where people go wrong: Whisking vigorously from the start. It incorporates air, which gives a bubbled slab and a shorter life.

  4. 4. Pour into the tray, level the surface, and refrigerate until fully firm — several hours at least, and overnight is better.

  5. 5. Lift the slab out cold, trim the edges, and cut into cubes with a long blade warmed in hot water and wiped dry between every cut.

    Where people go wrong: Cutting with a cold or wet blade. A cold blade drags and tears; a wet one leaves streaks that show on the finished piece.

  6. 6. Dust generously with cocoa powder, on all faces, and return to the refrigerator.

    Where people go wrong: Dusting before cutting. The cut faces are bare and the pieces stick to each other.

Serving and keeping

Serve cold or barely cool. The whole point is a piece that melts on contact, and a nama chocolate left to reach room temperature becomes soft rather than melting — it loses the moment it was made for.

Keep refrigerated in a sealed container and eat within a few days. It also takes up odours readily, which is a real problem in a domestic fridge; a sealed box is not optional.

It freezes acceptably if wrapped well, and it condenses on thawing, which spoils the dusting. Re-dust after thawing rather than before freezing.
