What cocoa butter actually does

The most expensive ingredient in chocolate and the one doing the most work — melt, flow, snap, mouthfeel and shelf life all sit on it.

If you read nothing else

Cocoa butter controls melt, flow, snap and mouthfeel, and it is the expensive part. The cocoa percentage on a bar does not tell you how much of it there is.

The melt

Cocoa butter's defining property is an unusually sharp melting curve. It is essentially solid at room temperature and fully liquid a few degrees above, right at body temperature.

Most natural fats melt gradually over a wide range and feel greasy or waxy as a result. Cocoa butter's narrow range is why chocolate melts cleanly on the tongue rather than smearing, and no other natural fat does this as well.

The flow

In a fluid chocolate, cocoa butter is the continuous phase carrying suspended sugar and cocoa particles. More of it means lower viscosity and thinner flow.

This is the entire practical difference between couverture and an eating bar. Couverture's minimum 31% cocoa butter is what lets it film thinly over a dipped strawberry; a bar at 26% pools and streaks, and no technique compensates for it.

Why it is expensive

Cocoa butter typically commands a substantially higher price per tonne than cocoa powder, and demand from cosmetics and pharmaceuticals competes with confectionery.

That price gap is the whole reason cocoa butter equivalents and compound coatings exist, and it is why bar sizes shrink and vegetable fat declarations appear when cocoa prices spike. Reading the fat on the label tells you more about a manufacturer's cost position than almost anything else.

Where the percentage hides it

A bar's cocoa percentage combines cocoa solids and cocoa butter without distinguishing them. Two 70% bars can have very different butter contents and therefore very different textures.

Some makers add extra cocoa butter to soften a high-percentage bar's mouthfeel; others do not. The ingredients list order gives a hint, and the texture in the mouth gives the answer.
