Melting chocolate in a microwave

Faster and safer than its reputation, provided you stop early — chocolate holds its shape long after it has melted.

The microwave's bad reputation comes from one behaviour: chocolate holds its moulded shape when melted, so a bowl that looks untouched can be entirely liquid underneath. A cook who judges by appearance keeps heating, and scorches it.

Stirring is what makes the method work. Short bursts at reduced power, with a stir between each, gives an accurate reading of the actual state and redistributes the hot spots that a microwave inevitably creates. It also avoids the water risk a bain-marie carries entirely.

What it is for
To melt chocolate quickly with no water present.
Working temperature
4050°C — The same limits as any melting: 50°C for dark, 45°C for milk and white. White chocolate is the one most often ruined here and wants half power throughout.
Does not work with
Chocolate chips melt poorly in any method because of their reduced cocoa butter, and a microwave makes that more obvious rather than less.

Method

  1. 1. Chop the chocolate evenly and put it in a dry microwave-safe bowl.

  2. 2. Heat at medium power for 20–30 seconds, then stir thoroughly. Repeat, shortening the bursts as it softens.

    Where people go wrong: Judging by appearance without stirring. Melted chocolate holds its shape, so the bowl looks unchanged when it is nearly done.

  3. 3. Stop while visible pieces remain and stir until they melt in residual heat.

    Where people go wrong: Full power for a minute, which scorches the base before the top has softened.
