Melting in a double boiler

Gentle, even, controllable — and the method most likely to introduce the one thing that ruins chocolate.

A bowl set over a pan of hot water melts chocolate without ever exposing it to direct heat, which makes it almost impossible to scorch. That is its whole advantage, and for white and milk chocolate it is a substantial one.

Its risk is water. Steam escaping around the bowl, condensation on a lid, or a wet spoon all introduce the small quantity of moisture that seizes chocolate, and the method's own equipment is what produces it. A bowl that sits well inside the pan rim, water at a bare simmer rather than a boil, and nothing covering the bowl address all three.

What it is for
To melt chocolate evenly without direct heat and without exceeding its temperature limit.
Working temperature
4050°C — Up to about 50°C for dark and 45°C for milk and white. The pan water should never boil hard — it is not the water temperature that matters but the steam it produces.

Method

  1. 1. Bring an inch of water to a bare simmer in a pan, then set a dry heatproof bowl on top so it clears the water completely.

    Where people go wrong: Letting the bowl touch the water, which puts the chocolate on the same heat as the pan and removes the method's only advantage.

  2. 2. Add chopped chocolate and stir occasionally as it melts.

    Where people go wrong: Covering the bowl. Condensation collects on the lid and drips back in, and the batch seizes.

  3. 3. Remove from the heat while a few small pieces remain and stir until they disappear.

    Where people go wrong: Waiting for complete melt over heat, which takes the chocolate past its limit in the last minute.
