Chocolate on a plated dessert

Three temperatures on one plate is the point. Chocolate is the component most damaged by being served cold.

A plated dessert usually combines temperatures and textures, and chocolate's contribution is disproportionately affected by which one it is served at. Cold suppresses aroma sharply, so a chilled chocolate element tastes of far less than the same element at room temperature.

The practical consequence is that chocolate components should be the warmest or the least chilled part of the plate wherever the composition allows — a warm sauce against cold ice cream rather than cold ganache against warm cake.

Decorations go on last. Anything tempered softens within minutes on a warm plate.

1860°C — Spans a room-temperature ganache to a warm sauce. The number that matters is that chocolate below about 15°C has given up most of its aroma.

Method

  1. 1. Decide which chocolate element carries the flavour and serve that one warm or at room temperature.

    Where people go wrong: Chilling every component for service, which flattens the chocolate more than anything else on the plate.

  2. 2. Keep tempered decorations cool and separate until the moment of plating.

  3. 3. Add sauces last so they do not skin or soak into anything.
