Tempering without seed chocolate

Two routes when there is no tempered chocolate to seed with: table it on a cold surface, or use cocoa butter powder as the seed instead.

Seeding needs chocolate that is already in temper. If everything you have has been melted, has bloomed, or is compound coating, there is nothing to seed with.

Tabling is the classical answer: pour two-thirds onto a cool stone slab and work it until it thickens and cools to 27–28°C, then recombine with the warm third. It needs a stone surface and produces mess, and it is the only equipment-free route.

The modern answer is powdered cocoa butter sold specifically as a tempering seed — already in Form V, added at around 1% by weight at 34°C. It is more reliable than tabling, costs little, and keeps indefinitely, which makes it worth having in a cupboard if you temper at all often.

2734°C — Two different targets. Cocoa butter powder goes in at 34°C; tabling cools to 27–28°C before recombining. Both finish at the type's working window.

Method

  1. 1. Melt fully to 45–50°C for dark, erasing every existing crystal.

  2. 2. Either: cool to 34°C and stir in powdered Form V cocoa butter at about 1% of the chocolate's weight.

    Where people go wrong: Adding it above 35°C, where the seed crystals melt on contact and contribute nothing.

  3. 3. Or: pour two-thirds onto a cool stone slab, work it to 27–28°C, and recombine with the reserved warm third.

    Where people go wrong: Using a slab at room temperature, which does not cool fast enough to matter.

  4. 4. Land at working temperature and verify with a test strip.
