Machine tempering
A machine does not temper better than a hand does. It holds the result indefinitely, which is a logistics advantage rather than a quality one.
A tempering machine melts, cools and holds chocolate at working temperature continuously, so a batch stays usable for hours instead of minutes. Tabletop units work in batches; continuous temperers run production lines.
What it does not do is produce better temper. The crystallography is identical — both routes are seeding Form V — and a well-executed hand temper is indistinguishable in the finished piece. What changes is that the twentieth piece matches the first, which is exactly the problem hand tempering has.
The practical catch is minimum charge. Most machines need one to three kilograms to circulate properly, so they are useless for the small batches a home cook actually makes.

- 29–32°C — The machine holds the type's working window. Set points differ for dark, milk and white exactly as they do by hand.

Method
1. Charge the bowl to at least the machine's stated minimum and set the melt cycle.
Where people go wrong: Under-filling. Below the minimum the chocolate does not circulate and the temperature reading stops representing the mass.
2. Let the machine complete its cool-and-rewarm cycle, then verify with a test strip before committing work.
Where people go wrong: Trusting the display. A machine reports its own set point, not whether the chocolate is actually in temper.
3. Top up with seed chocolate rather than melted chocolate as the level drops, so the crystal load stays right.
When it goes wrong
