Machine tempering
A continuous tempering unit holding the curve automatically. Standard at any production scale.
A tempering machine moves chocolate through heated and cooled zones on a screw or through a series of jacketed chambers, holding the melt, nucleation and working temperatures automatically and continuously.
The advantage over hand tempering is not only labour. A machine holds working temperature indefinitely, so a long moulding or enrobing run stays in temper throughout — where hand-tempered chocolate drifts out of range within minutes and has to be renewed. That continuity is what makes production at scale possible at all.
What it does
Holds the tempering curve automatically and continuously, keeping chocolate at working temperature and in correct crystal form for extended runs.
Why it matters
It converts tempering from a batch operation with a short working window into a continuous one, which is the difference between a kitchen and a factory.

When it goes wrong
Over-crystallisation during a long run, which thickens the chocolate progressively and eventually requires a full remelt.
