Melting for tempering
The first stage of tempering rather than a technique of its own, and it has a requirement ordinary melting does not: every crystal must go.
Melting chocolate you intend to temper is not the same operation as melting chocolate for a brownie. The purpose is to erase every existing cocoa butter crystal, including the stable ones, so that the crystals you seed afterwards are the only ones present.
That means going higher than ordinary melting: around 45–50°C for dark, held briefly, rather than the barely-melted state that suits a bake. Chocolate melted only to 40°C retains stable crystal fragments, and the temper that follows is unpredictable because it is competing with them.

- 45–50°C — Higher than ordinary melting on purpose. The ceiling is still 50°C for dark and 45°C for milk and white — above those the chocolate scorches whatever the intention.

Method
1. Melt fully to 45–50°C for dark, 45°C for milk, 45°C for white, using a bain-marie or microwave.
Where people go wrong: Stopping at the point where it merely looks melted. Residual crystals make the subsequent temper unreliable.
2. Hold at that temperature for a minute or two, stirring, then remove from heat.
3. Proceed immediately to seeding or tabling while the chocolate is still fluid.
When it goes wrong
