Tempering milk chocolate
Every temperature a degree or two below dark, because milk fat softens the set and interferes with crystallisation.
Milk chocolate tempers on the same principle as dark, with every number shifted down: melt to 45°C, cool to 26–27°C, rewarm to 30–31°C.
The reason is milk fat. It is softer than cocoa butter and it disrupts the cocoa butter crystal lattice, so the finished chocolate is softer and the working window sits lower. Using dark chocolate's temperatures on milk chocolate produces a soft, streaky set that reads as a technique failure and is a temperature one.

Method
1. Melt fully to 45°C — lower than dark, because milk solids scorch.
2. Cool to 26–27°C by seeding or tabling.
3. Rewarm to 30–31°C and hold.
Where people go wrong: Applying dark chocolate's 31–32°C, which is above milk chocolate's window and gives a soft set.
