Milk ingredients in chocolate
Four different dairy ingredients appear on chocolate labels and they are not interchangeable — the choice changes flavour, texture and how the bar tempers.
If you read nothing else
Dairy goes in dry because water seizes chocolate. Milk fat softens the set and lowers the tempering window; milk crumb produces caramelised flavours that mixing the same components separately cannot.
Why it is powder and not milk
Chocolate is a suspension of solids in fat with almost no water in it, and water makes it seize. Fresh milk is mostly water, so milk enters chocolate with the water already removed.
That single constraint explains the whole ingredient list. Whole milk powder, skimmed milk powder, whey powder, anhydrous milk fat and milk crumb are all answers to the question of how to get dairy into a low-moisture fat system.
The four you will see
Whole milk powder brings milk solids and milk fat together and is the most common single ingredient in European milk chocolate.
Skimmed milk powder brings the solids without the fat, and is usually paired with added milk fat so the two can be balanced separately.
Anhydrous milk fat, sometimes listed as butteroil, is added to soften the set and slow bloom. It also appears in some dark chocolates, which is why a dark bar is not automatically dairy-free.
Milk crumb is different in kind. Milk, sugar and cocoa mass are cooked and dried together before the chocolate is finished, which develops caramelised flavours that adding the components separately does not produce. It is characteristically British and it is the main reason a British milk bar and a Continental one taste distinct at similar percentages.
What changes in the kitchen
Milk fat is soft at room temperature, so a chocolate carrying more of it sets softer, has less snap and tempers in a lower, narrower window. That is why milk chocolate is harder to temper than dark and why milk couverture has its own curve.
It also affects storage: milk fat slows fat bloom, which is one reason it is added, and milk solids make the product more sensitive to moisture and to odour pickup.
