Tempering dark chocolate

The reference curve — 45–50°C, down to 27–28°C, back up to 31–32°C — and the most forgiving of the three.

Dark chocolate is the easiest to temper because it contains no milk fat to interfere with cocoa butter crystallisation. The window is wider, the set is harder and the snap is more decisive, which is why every tempering guide teaches this first.

The curve is three numbers: melt fully to 45–50°C, cool to 27–28°C to form crystals of every kind, then rewarm to 31–32°C to melt the unstable ones and leave Form V in charge. That final rewarming is the step people skip, and skipping it gives a soft, quick-blooming set.

Working temperature
3132°C — 31–32°C is the working window. Above 34°C the temper is destroyed and the process must start again.

Method

  1. 1. Melt fully to 45–50°C.

  2. 2. Cool to 27–28°C by seeding or tabling.

    Where people go wrong: Stopping at 30°C, which does not form enough crystal to seed the batch.

  3. 3. Rewarm gently to 31–32°C and hold there while working.

    Where people go wrong: Overshooting to 34°C, which melts the Form V crystals as well and undoes the whole operation.
