Bitterness vs astringency
Bitterness is a taste; astringency is a physical sensation. Confusing them is the single most common tasting-note error.
Why these get confused
Both are unpleasant at excess and both come from the same family of compounds, so they get collapsed into one complaint. They are detected by different systems and mean different things about the chocolate.

Choose Bitterness when
