Dark roasting
Building uniform, recognisable cocoa character — and flattening whatever the beans arrived with, faults included.
A dark roast pushes Maillard development well past the point where fruit and floral aromatics survive, producing deep, uniform, coffee-adjacent cocoa character.
Its commercial logic is straightforward and worth stating plainly. Dark roasting produces consistency from inconsistent input, because it overwrites what varies. That makes it the correct choice for a blended industrial product and the cheapest available way to make mediocre beans acceptable — which is why a very dark roast on a bar sold on its origin is worth being suspicious of.
What it does
Develops Maillard and pyrolysis products extensively, producing uniform roasted character and suppressing both origin notes and fermentation faults.
Why it matters
It is how industrial consistency is achieved, and how poor beans are made saleable. Both are true simultaneously.
