Light roasting
Preserving fruit, floral and acid character at the cost of leaving fermentation faults exposed.
A light roast develops enough Maillard character to produce recognisable chocolate flavour while preserving the volatile aromatics that a harder roast destroys — jasmine, red fruit, citrus.
It is the craft sector's default and it carries a real cost. Roasting suppresses off flavours as well as fine ones, so a light roast on beans with fermentation problems leaves those problems fully audible. Light roasting therefore requires good beans in a way dark roasting does not, which is part of why it became a craft signal.
What it does
Develops Maillard character to a moderate degree while preserving volatile aromatics that higher temperatures drive off.
Why it matters
It is what allows origin character to survive into the bar, and it exposes every fault the beans arrived with.
