Acidity in chocolate is largely acetic and lactic acid produced during fermentation. At moderate levels it is what makes a bar taste lively and lifts fruit character. Above that it reads as sour, and above that as unmistakably vinegary.
What determines which of those a reader gets is mostly drying. Slow drying lets volatile acetic acid evaporate out of the bean; fast artificial drying seals it in. Conching removes more of it later. So the same well-fermented bean can arrive as bright or as sour depending on two subsequent steps.

When it is a fault
Drying too fast — usually artificially — hardens the bean's exterior and traps acetic acid inside, where it stays through to the finished bar.
How to tell: Trapped acidity is sharp and separate, sits on top of the chocolate rather than in it, and often reads as distinctly vinegary. It is the single most common defect in chocolate from wet-season harvests.

Acidic chocolate needs a partner with its own acidity. Against a rich, low-acid partner it reads as sour rather than bright.
