Conching
Prolonged agitation that drives off harsh volatiles and coats every particle in fat. The step that made modern chocolate smooth.
Conching is extended mixing of warm chocolate — hours to days — and it does three things at once. It drives off residual volatile acids and other harsh aromatic compounds; it coats each solid particle fully in cocoa butter, which is what produces a smooth flow and a clean melt; and it allows further Maillard development at the temperatures involved.
It is named for the shell-shaped trough of the original machine, developed in Switzerland in the late nineteenth century, and it is the single innovation most responsible for chocolate becoming a smooth confection rather than a gritty one. It is also the easiest step to overdo: conche too long and the chocolate loses the fruit and acidity that made the bean interesting, ending up smooth and characterless.

Volatilises and drives off acetic acid and other harsh volatiles; coats solid particles in cocoa butter, lowering viscosity; and permits further flavour development through continued mild heating.
Why it matters
It removes harshness and produces flow. Under-conched chocolate tastes sharp and sits thickly; over-conched chocolate tastes of nothing much.

- Why the range is wide
- The range is genuinely this wide. Industrial milk chocolate may conche for days; a small maker working in a melangeur may conche and refine together over a similar period; some fine dark chocolate is conched deliberately briefly to preserve acidity.

- Not strictly required. Some makers omit a distinct conching stage where the refiner has done enough of the work, and some traditional products are deliberately unconched.
What it does to the flavour
Reduces acidity and astringency and smooths the flavour profile. Extended conching progressively removes origin distinctiveness along with the harshness.
When it goes wrong
Over-conching, producing chocolate that is smooth, mild and anonymous. It is a common outcome when a maker is chasing texture and treats conche time as a quality that only increases.
Commonly misunderstood
That conching is mainly about smoothness of texture. Texture comes largely from refining; conching's main flavour job is removing volatile acids. The two are confused because they happen together in a melangeur.
