Dry conching
The first conching phase, run at low fat content. This is where volatile acids actually leave.
Conching is conventionally run in phases, and the first is dry: the mass is agitated with less than its final fat content, so the material remains a powder or paste rather than a fluid.
That state maximises surface area exposure, which is what drives off volatile acids and moisture. Most of the acid reduction attributed to conching happens here rather than in the later liquid phase, which is why a maker chasing acidity reduction lengthens this stage specifically.
What it does
Agitates the mass at reduced fat content, maximising surface exposure and driving off volatile acids and residual moisture.
Why it matters
It is the phase that actually removes acidity. A short dry conche leaves a sharp chocolate however long the liquid phase runs.

Reduces acetic acid and other volatiles; continues mild Maillard development at temperature.
When it goes wrong
Too short, leaving a sharp, sour chocolate that later phases cannot correct.
