Liquid conching
The second phase, after the remaining cocoa butter and lecithin go in. This is where flow is built.
Once the dry phase has driven off what it can, the remaining cocoa butter and any emulsifier are added and the mass becomes fluid. Continued agitation coats every solid particle fully in fat.
That coating is what produces flow. A particle not fully wetted by fat contributes disproportionately to viscosity, so the liquid phase is where a chocolate's working properties are actually set — which is why couverture is conched to a specification rather than to a time.
