Dry vs liquid conching
Two phases of the same process doing different jobs — one drives off volatiles, the other builds flow.
Why these get confused
These are usually described as one operation called conching. They are sequential phases with different purposes, and a maker adjusting conch time is normally adjusting one of them and not the other.

Choose Dry conching when
Extend it when the mass is harsh or acidic — the classic remedy for a lot with high residual acetic acid.
Choose Liquid conching when
Extend it when the chocolate is smooth in flavour but too viscous to coat or mould cleanly.
