Biscuity, cereal-like sweetness. In milk chocolate it is usually the milk-crumb process rather than the beans.
Malt character is a cereal-adjacent sweetness that reads as biscuit or malted milk. In milk chocolate it is very often a direct product of the milk-crumb process, in which milk, sugar and cocoa mass are cooked together before drying — the same Maillard chemistry that gives malted drinks their character.
In dark chocolate it comes from roasting, and it is reported in Indian and some African material more than elsewhere.
