Indian cacao is a modern crop, planted from the 1960s onwards and concentrated in the southern states — Kerala, Tamil Nadu, Karnataka and Andhra Pradesh — usually intercropped with coconut or areca palm rather than grown in dedicated plantations.

Unusually among producing countries, India has a large domestic chocolate market, so most of the crop is consumed rather than exported. A craft bean-to-bar sector has developed over the past decade working with identified regional lots, which is beginning to produce origin claims at a finer grain than the country level.

History

Cacao was introduced to southern India in the twentieth century, principally in Kerala, Tamil Nadu and Karnataka, often intercropped with coconut and areca.

Most of the crop has historically supplied the domestic confectionery industry rather than export. A small craft sector has developed since the 2010s, making chocolate from Indian beans within India.

Fermentation practice was long geared to the domestic bulk market and was correspondingly brief. The craft sector's growth has been accompanied by longer, more controlled fermentation at a small number of estates.

A domestic industry rather than an export one

India is unusual among producing countries in that most of its cacao is consumed domestically. That shaped the sector: consistency and volume mattered more than flavour development, and the recent craft scene has had to build post-harvest quality from a low base.
