Sugar-free chocolate
Chocolate sweetened with polyols or high-intensity sweeteners instead of sucrose. The texture problem is the interesting part.
What it is
Sugar-free chocolate replaces sucrose with maltitol, erythritol, stevia or a blend. The substitution is harder than it sounds, because sugar in chocolate is not only a sweetener — it is a substantial part of the solid phase, and refining is calibrated around its crystal behaviour.
Maltitol behaves most like sucrose and is the most common choice, which is why many sugar-free products use it. It also has a well-documented laxative effect in quantity, which manufacturers are generally required to declare. Erythritol and stevia blends avoid that and are harder to get a good mouthfeel from.

What the percentage means here
Total cacao-derived mass. The remainder is the sweetener rather than sugar, and polyols have different bulk and sweetness intensity — so a stated percentage does not translate to the same eating experience as the equivalent sugared bar.
Legal minimums
These differ by jurisdiction, and the difference is real rather than technical: the same words on a wrapper describe different products either side of the Atlantic.

- European Union: A sugar-free product using the plain 'chocolate' name must still meet the compositional minimum for chocolate; the sweetener substitution does not exempt it.
Working with it
Tempering behaves broadly normally, but polyols have different melting and crystallisation behaviour from sucrose and the result is often slightly softer. Some sugar-free chocolate does not perform well in baking.
Commonly misunderstood
That sugar-free means low calorie. Polyols carry calories, and the fat content — which is the larger part of chocolate's energy — is unchanged.
