Alternative sweeteners in chocolate

Bulk sweeteners can replace sugar's volume; intense sweeteners cannot. That distinction explains every formulation you will meet.

If you read nothing else

Bulk sweeteners replace sugar's volume; intense ones cannot and always arrive with a bulking agent. None of them meaningfully reduces the energy, because cocoa butter supplies most of it.

Bulk against intense

Sugar does two jobs in chocolate: it sweetens, and it occupies roughly half the volume of the bar. A replacement has to do both.

Bulk sweeteners — maltitol, erythritol, isomalt, xylitol — occupy similar volume and can replace sugar directly. Intense sweeteners — stevia, sucralose, monk fruit — are hundreds of times sweeter by weight, so they replace the sweetness and leave a hole where the volume was. Those products need a bulking agent alongside, usually inulin or a polyol anyway.

That is why 'stevia-sweetened chocolate' almost always contains erythritol too.

The trade-offs, one by one

Maltitol tastes closest to sugar and has the strongest laxative effect at quantity — EU labelling requires a statement above 10% added polyols. Erythritol is better tolerated because more of it is absorbed and excreted unchanged, and it carries a distinct cooling sensation on the tongue that some people dislike intensely.

Xylitol works well and is dangerously toxic to dogs, which matters in a household with one. Isomalt is used more in decorative sugar work than in bars.

All of them crystallise differently from sucrose, so sugar-free couverture tempers on a manufacturer-specific curve and sets softer.

What none of them change

Energy content, in any meaningful way. Cocoa butter supplies most of a bar's calories and it is unchanged, so sugar-free chocolate is not appreciably lighter — a point worth knowing before paying the premium.

And flavour development: sugar participates in conching and in the mouthfeel of the finished bar, so a polyol-sweetened chocolate is not the same product with the sugar swapped out. It is a different formulation.
