Almond
Marzipan and toasted almond, and one of the more reliable varietal markers for Criollo-descended material.
Almond character comes in two distinct forms. Toasted almond is a roast product and behaves like the rest of the nut family. Marzipan — sweeter, softer, slightly floral — is reported often enough in Criollo-descended and Porcelana material to be treated as a genuine varietal signal.
That second version is worth learning, because it is one of the few flavour notes that survives a light roast and points at genetics rather than at process.
