Hazelnut
The most commercially important nut note in chocolate, and usually an actual hazelnut rather than a roast product.
Hazelnut is the note behind gianduja, chocolate spreads and a substantial share of European confectionery. In almost every case where a chocolate tastes strongly of hazelnut, hazelnut is present — the affinity is real and the industry has built on it heavily.
Where no nut has been added, a hazelnut-like character can arise from roasting, because roasted nuts and roasted cacao share Maillard chemistry. That version is subtler and generally described as nutty rather than specifically hazelnut.
