Roasting: turning precursors into flavour

Roasting converts fermentation's precursors into aroma via Maillard chemistry. Light preserves origin character and exposes defects; dark builds cocoa depth and hides them. Neither is better in the abstract.

The chemistry

Roasting drives the Maillard reaction between the free amino acids and reducing sugars that fermentation produced. The products include pyrazines, which carry the roasted, nutty, cocoa character that most people identify as chocolate flavour, alongside aldehydes, esters and hundreds of other volatiles.

Typical parameters run 110–150°C for 15–45 minutes, but the numbers matter less than the profile — how fast the temperature rises, how long it holds, how quickly it cools.

What roasting also does

Three things happen alongside flavour development. Moisture drops from around 7% to 2%, which is necessary for grinding. Residual acetic acid volatilises, reducing sourness. And the shell loosens from the nib, making winnowing far easier — which is why whole bean roasting dominates over nib roasting despite being less even.

Roasting also functions as a pathogen kill step, which is the food safety consideration that raw chocolate has to address by other means.

The trade-off that defines a maker

Light roasting preserves the fruit, floral and acid notes fermentation created, and exposes every shortfall in the beans. Dark roasting builds deep cocoa character and masks a great deal.

Neither is correct. Dark roasting is the right answer for variable commodity beans and is why industrial chocolate tastes consistent. Light roasting is a bet that the beans are worth hearing, and it is a bet that loses badly with mediocre material. A maker's roast philosophy is the clearest statement they make about what they think of their beans.

Reading a roast in the bar

Aggressive sourness or a green, raw-bean note usually means the roast was too light for the material — not that fermentation failed, though the two look similar. Ashy bitterness that flattens everything else means it went too far.

A bar with clear cocoa depth and identifiable fruit or floral notes alongside has been roasted to reveal rather than to standardise, which is what a good roast profile is for.
