Coffee character in chocolate is not a coincidence or a marketing comparison. Coffee and cacao are both fermented seeds, both roasted, and both derive much of their flavour from the same Maillard chemistry acting on similar precursors. Pyrazines dominate in both.

That shared route is why the pairing works and why a darker roast pushes chocolate towards coffee. It is also why a very dark chocolate roast starts to erase origin character: as the roast character grows, it converges on a generic profile that is roughly the same whatever bean went in.
