Ivory Coast

The largest cacao producer in the world by a wide margin. Most chocolate anyone has ever eaten contains Ivorian cacao, and almost none of it says so.

Ivory Coast grows more cacao than any other country, and the gap between it and second place is substantial. The crop is overwhelmingly smallholder-grown on plots of a few hectares, bought through a network of intermediaries, and exported as bulk-grade beans that are blended before anyone tastes them.

The consequence is an origin that is simultaneously the most important in the world and almost entirely invisible to consumers. There is no Ivorian equivalent of the Madagascar or Chuao story, because the crop is not organised to produce one — it is organised to produce enormous volumes of consistent, blendable cacao, which is a genuinely difficult agricultural and logistical achievement that the fine-flavour framing has no vocabulary for.

The sector's difficulties are real and well documented: producer prices, deforestation and labour conditions are all subjects of continuing scrutiny and reform effort. ChocolateHQ records that those issues exist and does not summarise contested evidence about them here.

Growing conditions

Lowland forest belt across the south and centre of the country, with a main crop and a smaller mid-crop. Overwhelmingly smallholder production, with ageing trees a recognised constraint on yields.

History

Cacao was introduced under colonial administration and expanded rapidly through the twentieth century, overtaking Ghana to become the largest producer. The sector's structure — many small farms, many intermediaries — dates from that expansion.

Variation between farms is a recognised source of inconsistency, and is one of the things centralised buying elsewhere in the region is designed to reduce.

Why the largest origin is the least discussed

Craft chocolate writing organises itself around distinctiveness, and bulk cacao is grown to be interchangeable. That makes Ivory Coast almost impossible to write about in the genre's own terms, and it produces a strange inversion in which the origin behind most of the world's chocolate is the one readers know least. The gap is a property of the writing rather than of the cacao.
