Chocolate and peated whisky
Smoke against earth. One of the few pairings where two intense partners genuinely improve each other.
Peat smoke and chocolate's earthy register occupy different parts of the palate, which is why this works where two similarly intense partners usually do not. The chocolate's fat also softens the smoke's edge, and the smoke cuts the fat.
It is emphatically not a universal pairing. Peat overwhelms anything delicate — a floral Ecuadorian bar against an Islay malt is a waste of the bar. It wants an earthy, tobacco-forward dark chocolate with weight of its own.

Earthy dark chocolate only. Peat erases floral and fruit character completely.

Peated whisky with a delicate single-origin bar. The pairing is recommended because both are prestigious; the chocolate contributes nothing audible.
Serving
Water helps here more than with any other spirit — peat opens considerably with dilution.
