Avoiding overheating

Three ceilings, one per chocolate type, and a change that cannot be undone once passed.

Chocolate has a hard upper limit that varies by type: roughly 50°C for dark, 45°C for milk and 45°C for white. Beyond it, sugars caramelise and milk solids scorch, and the result is a thick, dull, slightly grainy mass with a burnt note.

The damage is chemical rather than physical, which is why it cannot be reversed. Seized chocolate can be turned into a sauce; overheated chocolate has changed flavour permanently. White chocolate is the most vulnerable because it has the most sugar and milk solid and no cocoa solids to buffer them.

To keep chocolate below the temperature at which its flavour changes irreversibly.
Working temperature
4050°C — The ceilings are type-specific and the difference matters: 50°C is fine for dark and will damage white.

Method

  1. 1. Choose the ceiling for the type: 50°C dark, 45°C milk, 45°C white — and use a thermometer rather than judgement.

  2. 2. Apply heat in short intervals with stirring, and take the chocolate off the heat before it is fully melted.

    Where people go wrong: Continuous heat with occasional stirring, which lets the base of the bowl run far above the average.

  3. 3. Let residual heat finish the melt. Chocolate coming off the heat at 45°C will continue to rise for a minute.
