Chocolate and butter

Fat on fat, salt as the bridge. The Continental breakfast combination and a genuinely good one.

Chocolate with butter — usually on bread — is an everyday combination across France, Spain and much of Europe. It has no flavour bridge in the usual sense; it works on salt and on complementary fats.

Salted butter is the version that matters. The salt suppresses chocolate's bitterness exactly as flaked salt does, and butter's dairy notes fill in what dark chocolate lacks. Unsalted butter contributes fat and very little else.

Serving

Butter at room temperature and bread barely warm. Hot toast melts the chocolate into it, which is pleasant and no longer a pairing of two textures.
