Chocolate has seized

A small amount of water turned it into a stiff paste. It cannot be returned to melted chocolate — but adding much more liquid rescues it as something else.

Seizing is caused by water, and the counterintuitive part is that a little is disastrous while a lot is fine. Chocolate is dry particles suspended in fat; a small quantity of water wets the sugar and cocoa particles and pulls them together into a stiff, grainy mass. Add enough liquid, though, and everything dissolves into a smooth emulsion — which is what a ganache is.

So a seized batch is unrecoverable as melted chocolate and perfectly usable as a sauce or a ganache. That is the whole of the fix, and it is worth knowing before throwing it away.

Method

  1. 1. Stop heating. Additional heat will not reverse seizing and risks scorching on top of it.

  2. 2. Add warm liquid deliberately — roughly a tablespoon of cream, milk or water per 50g — and stir until it smooths out.

    Where people go wrong: Adding a few drops, which makes the seizing worse. The rescue requires a decisive quantity, not a cautious one.

  3. 3. Use the result as a sauce, a ganache or a hot chocolate base.

Why a lot of water is fine and a little is not

With a small amount of water, the sugar dissolves into it and forms a syrup that glues the cocoa particles together — hence the grainy paste. With enough water, there is sufficient liquid phase for everything to disperse evenly, and the fat emulsifies into it. The threshold is somewhere around a tablespoon per 50g, which is why the fix has to be decisive.
