Chocolate and raspberry

Sharp enough to be a genuine structural contrast — and sharp enough to fight an acidic chocolate. The classic white chocolate partner.

Raspberry is the sharpest of the common berry pairings, which makes it both more effective and more easily mismatched than strawberry.

Against white chocolate it is close to perfect: white has no acidity and raspberry supplies all of it. Against a bright Madagascan or Tanzanian dark bar it is the classic failure — two acidities do not produce a brighter pairing, they produce a sour one, and both partners were chosen for exactly the quality that ruins it.

Use freeze-dried raspberry in anything that must keep. Fresh raspberry introduces water and reduces shelf life to days.
