Chocolate and strawberry

Sweeter and less acidic than most berries, which makes it more forgiving — and its water content makes dipped strawberries a same-day product.

Strawberries are the gentlest of the berry pairings: sweeter, softer and lower in acid than raspberry or blackcurrant, so they contrast with chocolate without the risk of doubling an acidity that is already there.

The practical constraint is water. A dipped strawberry is a same-day item — moisture from the fruit migrates into the coating, and any surface moisture at the point of dipping causes the chocolate to seize or slip. Commercial dipped strawberries survive by being dipped in compound coating rather than chocolate.
