Chocolate and date
The sweetest thing in this file and almost entirely without acidity, which makes it a caramel substitute rather than a fruit pairing. It needs salt or a very dark chocolate to have any structure at all.
Dates are around two-thirds to three-quarters sugar by weight and carry very little acid. Their flavour is deep caramel and toffee rather than fruit — that character is Maillard chemistry from the drying and from the fruit's own enzymatic changes, and it is why a date reads to most palates as a confection rather than as a fruit.
So pairing a date with chocolate is closer to pairing caramel with chocolate than to pairing a raisin with it. The date supplies sweetness, body and a soft yielding texture, and it supplies almost no contrast on its own.
Which is exactly why the standard treatments involve salt, a stuffing of something sharper or more bitter, and a very dark chocolate. A date stuffed with a walnut half and dipped in 85% is a well-balanced object; a date dipped in milk chocolate is sugar in two forms.
The principle
Treat it as caramel, not as fruit. It brings no acidity, so the contrast has to come from the chocolate, from salt, or from what you put inside it.
Pairings
Above about 75% the chocolate's bitterness is the only thing standing between a date and pure sweetness, and it is enough.

The result is genuinely sugar-free only in the sense that no sugar was added. Date sugar is sugar and the nutrition label will say so.

Dates with milk chocolate. Two sweet things with no acid and no bitterness between them; the result is heavy rather than rich.
Serving
Sea salt on a chocolate-dipped date is not a garnish. It is the only structural element in the whole thing.
