Making chocolate caramel

A sugar cook with chocolate added at the end. The temperature the caramel reaches decides whether it pours, chews or snaps.

Chocolate caramel is caramel with chocolate stirred in once the cook is finished. Adding chocolate during the cook scorches it, because caramel temperatures are far above chocolate's ceiling.

The cooking temperature sets the texture, and this is the whole craft of it: around 112°C gives a pourable sauce, 118°C a soft chew, 124°C a firm cut caramel, and past 140°C it sets brittle. Those bands are narrow and a thermometer is not optional.

Salt is the standard addition for good reason — it suppresses the caramel's sweetness and lifts the chocolate at the same time.

Method

  1. 1. Cook sugar, cream and butter to the temperature for the texture you want, watching a thermometer.

    Where people go wrong: Judging by colour. Colour tracks caramelisation; temperature tracks texture, and they are not the same thing.

  2. 2. Take it off the heat, let it drop below 60°C, then stir in the chopped chocolate.

    Where people go wrong: Adding chocolate to a hot caramel, which scorches it immediately.

  3. 3. Add salt to taste, pour into a lined tray and let it set at room temperature.
