Chocolate and matcha
Powdered whole leaf, so it carries far more bitterness and body than brewed green tea. That changes the pairing entirely.
Matcha is whole leaf suspended rather than infused, which means it delivers the leaf's full bitterness, astringency and umami. It is consequently a much stronger partner than brewed green tea, and the delicacy advice does not apply.
The classic pairing is with white chocolate, and it works by contrast: matcha supplies bitterness and vegetal depth where white chocolate has none, and white chocolate supplies the sweetness matcha lacks. That the two are also a fixed confectionery category in Japan is not a coincidence.
