What it is

An instant mix is formulated to dissolve in hot water without lumps, which requires the cocoa to be alkalised and usually agglomerated, and the blend to carry sugar, milk solids and often an emulsifier. In most supermarket products sugar is the first ingredient by weight.

It is worth separating from the two drinks it sits between. Real drinking chocolate is made by dissolving chocolate — cocoa solids and cocoa butter together — into liquid, and is rich and viscous because the butter is still there. A cocoa-powder drink made from scratch is thinner but carries more cocoa per unit of sugar than a mix does. An instant mix is optimised for convenience, and the price of that is composition.

None of which makes it bad. It is simply not the product a reader is looking for when they are trying to reproduce a thick Spanish or Italian chocolate.

What the percentage means here

Rarely quoted, and where it is, it usually refers to the cocoa content of the blend rather than to a cacao percentage. The more informative number is the sugar content per serving, which is on the nutrition panel.

That a disappointing hot chocolate is a technique problem. If the mix is more than half sugar, no method will produce a rich drink from it.
