Cocoa, drinking chocolate and hot chocolate

Three words for three different products, used interchangeably on packaging — and the difference is whether there is cocoa butter in it.

Cocoa powder is defatted; drinking chocolate keeps the cocoa butter; instant mix is mostly sugar. Read the first ingredient — the words on the front are not used consistently.

The three products

Cocoa powder is the defatted solid left after cocoa butter is pressed out. On its own it is unsweetened and bitter, and a drink made from it is thin, intensely cocoa-flavoured and low in fat.

Drinking chocolate, properly, contains real chocolate — cocoa solids and cocoa butter — usually as grated or flaked chocolate or as a high-cocoa powder blend with fat retained. The cocoa butter gives it body and a rounder mouthfeel.

Instant cocoa mix is cocoa powder with sugar, milk powder and usually an emulsifier, formulated to dissolve in hot water. It is the most convenient and the thinnest of the three.

The words are not used consistently on packaging, and in some markets 'drinking chocolate' means the instant mix. The ingredient list settles it.

How to tell which you have

Read the first ingredient. If it is sugar, you have a mix. If it is cocoa powder, you have cocoa. If it is chocolate or cocoa mass, you have drinking chocolate.

The fat content on the nutrition panel is the other tell: a defatted cocoa powder is low in fat, a real drinking chocolate is substantially higher because the cocoa butter is still in it.

The national traditions are a fourth thing

Spanish chocolate a la taza is thickened with starch and eaten with a spoon. Italian cioccolata calda is thickened and served in small volumes. Mexican drinking chocolate is stone-ground, coarse, cinnamon-spiced and whisked to a foam.

None of those is a stronger version of a northern European hot chocolate — they are different preparations with different ancestries, and a product made for one will not behave like a product made for another.
