Shell moulding vs enrobing

Two routes to a filled chocolate. Moulding builds the shell around the filling; enrobing pours chocolate over a filling that already holds its shape.

Choose Shell moulding when

For firm centres — ganache slabs, marzipan, caramels cut to shape — and where a thin even coat is wanted.
