Shell moulding
Casting a thin shell, filling it and capping it. How every moulded bonbon is made, and where tempering is most visible.
Shell moulding fills a polycarbonate mould with tempered chocolate, inverts it to pour out the excess, and scrapes the surface clean — leaving a thin shell adhering to the cavity walls. The cavity is then filled and capped with more tempered chocolate.
Everything depends on the temper. Correctly tempered chocolate contracts as it sets and releases from the mould by itself; badly tempered chocolate must be forced out, arrives dull, and blooms within days. Shell thickness is controlled by the chocolate's viscosity and by how long it sits before inversion, which makes couverture essential.
