Liquorice and anise

A sweet, slightly medicinal aromatic note that appears in some long-fermented material without any being added.

Liquorice and anise notes are uncommon and distinctive, and like clove they arise from phenolic compounds produced during extended fermentation rather than from any addition.

They are reported most often in Trinidadian and some Venezuelan material. As a descriptor it is useful precisely because it is rare — a taster who identifies liquorice is describing something specific rather than reaching for a general term.
