Mineral descriptors — wet stone, slate, flint — are borrowed from wine writing, and their status in chocolate is genuinely unclear. There is no established mechanism by which soil minerals transfer a taste to a cacao bean, and the same claim in wine has been extensively disputed.
What tasters are probably describing is a combination of low fruit, moderate astringency and a particular kind of dryness on the finish. That is a real sensory experience; whether it has anything to do with minerals is a different question, and this record declines to assert that it does.
