Red fruit is the signature of the origins craft chocolate is built on — Madagascar above all, with Tanzania, parts of Peru and Bolivia's wild material close behind. It arrives as a sharp, bright, slightly sour fruitiness rather than a jammy one, and it travels with acidity almost without exception.

That pairing of fruit and acid is the key to reading it. Red fruit in chocolate is rarely a genetic characteristic on its own; it is what a particular kind of fermentation does to particular beans, and the acidity is the same process leaving its fingerprint.

    Yeasts in the pulp produce esters during the anaerobic phase. Shorter fermentations preserve these; longer ones develop deeper, rounder character instead.

    How to tell: Fermentation-derived red fruit always arrives with noticeable acidity, because the same short fermentation that preserved the esters also left more acid in the bean.

    Some Trinitario and Criollo-descended populations produce fruit-forward precursor profiles more readily than Amelonado material does.
